Can eValid do that?

Yes, eValid can handle virtually any level of complexity of web application -- including those that are heavy AJAX oriented.
There are two reasons for this:
(1) eValid tests are done within the eValid browser (itself a clone of the
IE browser, with a clone for FireFox on the way), so you have no question about the accuracy and exactness of the user emulation.
(2) There are special commands in eValid that can synchronize playback
in spite of the "asynchronous nature" of AJAX.
There are regular webinars about this and you can contact the support team directly if you have a particularly difficult application. The support team has a 100% record for attaining reliable playback of ANY web browser enabled application.
