Can eValid do a site analysis of the responses of a website to a mobile device?

Yes it can, but you have to tell eValid to imitate a mobile device using the -AGENT switch in the Command Line interface.

Once you launch eValid in this non-IE state, it will continue to report itself to the server "as if" it is the specified device. It does this by attaching the UserAgentString to every request made to the server associated with that domain.

You're "identity" to the server is exactly that of the device you've selected, and the HTML that is send down based on your various requests is exactly what will be sent to that device.
