Can I do site analysis while imitating a non-PC device's browser?

In a word, yes.

The ability of eValid to imitate being any device has to do with the way eValid presents itself to the server.

So if eValid is launched as a device of your choosing, then it remains in that state for any purpose. Including doing site analysis.

Here is how you can launch eValid to imitate an iPad (for example):

And, you may want to take advantage of the capability to run site analyses "in the background" with a batch launch of a playback of a script that uses the & SiteAnalysis command.
