Can two eValid's be running at one time? What happens when you do that?

Yes, you can run two -- or more -- eValid's at the same time.

eValid, like any browser, is a separate executable program. So multiple instances all are independent of each other.

If you have a script that is recorded in a way that does not make explicit reference to the desktop then for that script you can (a) run eValid fully minimized and/or (b) run 10's or 100's of eValid's all in parallel.

(That's the way eValid does load testing, by the way.)
