In my testing lab I have several users for my copy of eValid.
Is there a way to have eValid "remember" each user's settings so the users doesn't have to redo them?

Yes, this is common enough.
Either to accommodate multiple users or for one user to handle different kinds of applications.
A particular combination of settings is called a Profile in eValid.
