Specifically what can the EPI do? What is it exactly? How can it help us? Is this not part of the bundle we bought? If not what bundle should we have gotten?

EPI was added mid-2008...it adds a programmatic interface (eValid Programmatic
Interface = EPI). Any script can be converted into a C++ program which
compiles and runs eValid through the EPI.
